The owner of the mill is a passionate farmer who grows ancient grains and many other traditional crops: lentils, flax, chickpeas, barley and farro, all cultivated in the traditional way, with respect for the land and the seasons. The result? His stone-ground, whole-bran pasta is simply the healthiest and tastiest you will ever try!! No industrial shortcuts, no additives: just pure Tuscan wheat, water and generations of know-how.
From the wheat harvest to your plate
I really LOVE showing my clients around the mill and letting them see how pasta comes to life step after step: from the wheat harvest in the golden fields, to the slow stone milling of the flour, to the shaping of the dough into Spaghetti, Pici, Penne or Fusilli. Breathe in the warm aromas of freshly ground grain and freshly made pasta... it is a feast for all the senses, and a wonderful experience for couples, families and kids too!
Pici pasta: the true taste of Tuscany
And then comes the best part: the tasting! You will finally savor freshly made Pici pasta, the traditional hand-rolled noodles of Tuscany, dressed with the yummy Aglione sauce, a delicious combination of tomato and the famous elephant garlic of the Val di Chiana, sweet and gentle on the palate. Or, if you prefer, with the classic cacio e pepe (cheese and pepper) or a rich, slow-cooked Tuscan meat sauce. Trust me: once you taste real Pici all'Aglione, you will never forget it!
